Polvillo azedo (sour polvillo) is a fermented cassava starch with a white color and a fine floury texture. It is rich in carbohydrates, vitamin B9, vitamin C, magnesium, manganese, and copper.
**Features**
- Stronger acidity than sweet polvillo
- It allows air bubbles to form in the dough, acting as yeast
- A great substitute for wheat flour

**Cooking method**
- Obtained through a process of crushing cassava into a rubbery consistency
- After the starch is crushed, it goes through a fermentation process before being dried and milled.
- Polvillo is crushed and turned into the white powder we know today.
