Canjica is a white or yellow corn that has had the germ removed and is dried. The name of the food, canjica, is also used to describe this dessert. It is a very popular corn dessert in Brazil, and can be made like porridge by adding milk, sugar, and cinnamon and simmering until soft, so be sure to give it a try!


In northern (northeastern) Brazil, coconut, coconut milk, cloves, roasted peanuts, etc. Warm canjica is similar to Japanese red bean soup, and is also delicious served chilled.


<How to make canjika>
(500g: about 10 servings)
1. Boil 500g of canjika, which has been soaked in water overnight, in a pressure cooker with 2 liters of water.
After about 20 minutes, when the canjika is soft, open the lid, add 1 liter of milk and about 400g of condensed milk, and simmer for another 30 minutes.
3. Add coconut milk, cinnamon, powdered peanuts, etc. and enjoy.
